It is a sonnerie watch... the crown can be set on GS Grand Sonnerie mode that strikes all hours and quarters, PS Petit Sonnerie that strikes only on full hours and S as a silent mode... the pusher on the other side is for a minute repeater...

Very cool video. One interesting thing I noticed...
The computer screen they show with the 3d movement model shows the date is from 4 years ago when this was filmed
