Please correct me if I'm wrong, but this vintage 1680 just got butchered with a modern dial??

The glass is also sapphire... I thought these used acrylics?

Well its a 16800 and not a 1680 now the 16800 had sapphire crystal.And was one the first dials to featured white gold settings in which the luminous indicies were placed,and rated to 1000ft.And was in production for a very short time around 1986-89 then replaced by the 16610with the Cal 3135.And basically the only difference between the 16800 and the 16610 is The bezel was now fitted with safety features for divers, which allowed the bezel to only be turned anti-clockwise. This was because if the bezel was moved by accident, it could only mean the diver has less time underwater and not more, added safety for diver

The 16800 is the transitional model first with sapphire crystal. and as far as the dial later 16800 come with the modern dial WG surrounds not mat, the only thing i can see is that if it is a RSC replacement dial should it be marked swiss and not swiss made? I think all RSC replacement dials are marked swiss.

Indeed the watch in the photo is a reference 16800, the replacement for the 1680. Featuring the then new fast beat 3xxx movement, the 16800 was orginally introduced circa 1979 or 80. The first few years(some say till about 83 or 84) the watch featured a matt non WG surround dial.
Later Rolex moved to the gloss WG dials as seen on the 16610. The 16800 was the first diver to feature a unidirectional bezel with a "click" feature. (The 1680 was bi-directional friction).
The 16800 also was the first diver to have a quick-set date feature and of course a sapphire crystal.
As stated, known as the "transitional" the 16800 possessed features of the new and the old.
Replaced by the 168000, the first to use 904 steel, the 16800 in matt configuration is a bit of a collector's piece.
