Personally I'd keep the variety - an automatic 3 hander with sapphire crystal (114060) and a manual wind chronograph with Hesalite (Speedy).

Both the Sub and Speedmaster are icons in their own right, and while the OP name is very historic, I find the current OP models distinctly ordinary. There's not a lot that's special about it IMO, apart from some "trendy" colours that some seem to like these days.

Very limited poll options. If it were I, I'd keep the pair you've got and add a reference with a date window, like a Datejust 36 or 41 with dial, bezel, and bracelet to suit your tastes.

All 3 are similar in terms of black dial. OP is not for me. Keep and add? Something other than a black dial? Dealers are not buying. You’ll get clobbered if you sell-trade.

I would honestly keep the Sub and the Speedy. Wait to add the OP but not in black, for me that is too similar to your Sub, especially having both with the time only complication. The Speedy is great on a bracelet, NATO, and leather strap to add some variety; I wouldn’t part with it.

Keep the Speedmaster. You already have a boring 3 hander from Rolex, you don't need another. BTW, I have a 124060 so speak from experience. It may be boring, but it does it so well!

Now back to the OP, that really is boring so please don't sell that nice Omega to fund it.

Some unanswered questions here, but I may have missed it. Do you wear your Speedmaster often? If you do and enjoy it, then I would keep it. I personally really really like the simplicity and look of the OP41. I’m not a huge fan of additional complications.

The other question is whether you were buying from an AD or grey. If you can sell your Speedmaster for a decent price and buy the OP 41 at retail, I personally would do it. But I definitely would not recommend paying grey prices for the OP41.

I would keep the speedmaster. The DJ does not look as interesting. Speedmaster also gives a wide range of options when it comes to straps (compared to the DJ).

Clearly you like black dials. Clearly OP is a cleaner design than the Speedmaster. Is that what you are going for? The thickness of thr Speedmaster is a bit of a turn off for me. The OP is nice and sleek and slim.
