And alas, dry aged is lost on me: I prefer other end of the spectrum, the clean, minerally taste of grass-fed, un-aged.

I'm not an expert but really appreciate great steaks. My favorite cut to cook is bone-in ribeye which is very forgiving. I just add salt, pepper, and occasionally thyme. I don't have the facilities (or dedication?) to dry age like the OP.

That’sgreat. I got a text from my AD about the same time my water heater went out. At that point I had three texts going - one with the AD where we were going back on forth on a trade in price, one with a plumber friend who is walking me through the repair, and one from my wife asking me what I want for dinner. Pretty sure the AD was wondering what I was talking about because I got them all mixed up including him offering me a price for my trade and me responding with “No that’s not it” Thankfully it worked out!

Ok, nowhere near as 'bad' as your situation.... Reminds me when I had the BMW at the stealership getting Dinan Stage 4 upgrades and an M LSD installed. Thought I was texting my wife, and instead was texting the head service guy working on my car, to bring home KFC for dinner. He was amused. When I went back the next day to collect the car there was KFC in the passenger seat(!)

Could have been worse: Could have offered the plumber a Rolex as payment for the repair, offered to fulfill one of your AD's sexual fantasies if he got you the watch you wanted, and told your wife that this wasn't the price you guys had agreed upon, and you were going elsewhere .

Ha! It’s funny because when the text traffic got quiet I started getting nervous. When I went back and saw what I had texted I immediately texted the AD back and explained. Soon after he said - “we’re all set come on in” sigh of relief there. Heck I even fixed the hot water heater and had a nice dinner

Many thanks, and yes nowadays we need LOTS of patience. Please give it a few years and the market will change yet again. It's the unnatural financial ebb and flow of things. Mayors / WoS have been very professional, even when I threw a temper tantrum as the 'new normal' made no sense to me at the beginning of this mess (after decades of being an enthusiast).
