Excluding the brands mentioned (and sticking to the $3-$5k range), I'd say Nomos and microbrands like Dornbluth, Kurono, Ming and Habring.

My problem with Grand Seiko is that ... it makes you question why you would want anything else. The finish for the price will blow your mind and it become harder to justify their "Luxury" brands that you have to pay for and get less ...

Grand Seiko might be the best bang for buck in that price range. As others mentioned Ball and Nomos are great as well.
