Steel - that's the icon. The PM is another PM.

PM, no doubt, the dials are so much more interesting and not to forget the polished edges of the sub dials

I don't know nor care from a collector's pow, i think one should buy what he loves. And given your option, i would easily pick up a PM model over a SS one. I guess i would only go for a SS version against a PM one only if the SS had a particular dial that i would love and only available on the SS piece.

Easy: the one you really want the most and the one you think it will spend more wrist time, regardless of outer opinions.

SS Panda which is difficult to get at retail, then buy a PM Daytona at retail or even under retail soon. It will be easy to get most PM Daytonas at retail from AD soon

From the AD? I’d take the steel while it’s being offered. The FG PN dial can be picked up at another point with a lot more ease.
I chose to get an OF model as i feel it’s a good middle ground.

As much as I love the SS Daytonas, I wouldn’t say no to a WG with blue dial. :-)

Me personally…PM, I don’t base any watch buying decisions on “collectibility”. Get what YOU will enjoy most.

I would never turn down a SS Daytona offered to me at retail. If I liked a gold model, I would add it later.

With the Daytona in this scenario at MSRP isn’t even close. The SS is miles higher in value better in terms of long term value if you can get them at msrp and maybe even if you can’t.
That said, SS in Rolex has always shown to be the most desirable in the long term. Consider most if not all PM models historically get discounted at the AD to start with so buying any PM at the AD for msrp is not hard and is sometimes a requirement to even be considered for a SS Daytona purchase. It doesn’t hurt that Paul Newman’s Daytona was also a SS model and fetched THE highest money of any wrist watches in history including any and all precious metals from any other brands. This shows that material has very little to do with desirability and worth in wristwatch long-term. In the end these are not intended to be investments and are a “quality of life” object so buy what you like and don’t worry about the return value.

From a collectability stand-point, probably the SS. There twenty variants of PM Daytona for each SS variant (though I don't know the numbers produced of both), and collectability is usually about degree of rarity, so SS may be the more collectable.

Not sure what collectible means relative to Rolex. Are any current models really collectible? In any case SS models are great of you can get one. PM are more unique to me. Lucky to have a couple of each. I have been doing a mix of older + current PM models.

I’m a PM guy, first and foremost, but if I was a stereotypical “collector” then SS b/w those two. Get what you want.

Tbh, you won't get a ss at retail unless you've got a good history anyway. Get a pm and the ss MIGHT turn up one day. I do prefer the pm for reference
