Black dials are my favorite.
You know the fluted bezel on your Date-Just would look great (to me), but it is up to you.
It is a fairly simple and quick (10 minute) task for a good watchmaker to change the bezel.
If you are worried about originality, you could always swap it back as easy as the first time.
