amplitude???

Amplitude....I hadn't heard that term until a few days ago....(shows you how much I know about watches!) But after doing a bit of research i have a modicum of knowledge, and realise that it is a VERY complicated issue.but here goes: It appears that amplitude should be somewhere between 290- 315 degrees. But in a recent article by a well known watchmaker and dealer in used Rolexes he stated that a watch he repaired came up with a fantastic 330 degrees amplitude!
I have understood that too much amplitude is as bad as too little .( and too little will make a watch run slow) My question is : what is ideal? when is enough enough? My new Sub has been recorded as having between 305-310 degrees amplitude and is running at +.00 and +.01 ( which I think is 100th of a second) so that seems pretty darn good to me! What's the story?
