For the Ethiopian I have a friend that owns a coffee house that roast their own beans in Pasadena. When I buy from his place the beans were usually roasted earlier in the week.  my buddy made me the best espresso I have ever had. It took him about 4 tries before he thought it poured right for me to drink. Just like a WIS, there are coffee aficionados that are extreme.
