How come my GMT has a rubber ring between the crown and the case when the crown is unscrewed but my DateJust doesn't? Does the rubber ring only come with the "triplock?"

Your GMT has a Triplock Crown and that o-ring is the third seal...
A Datejust only has the Twinlock Crown with two separate seals, omitting the one on the exterior threads....... ![]()
