i am considering either the 000 or 005 and i see they are listed as having different movements. the 000 has an OP I and the 005 has a OP II. so what is the difference?

The difference is trivial. They removed the canon pin for the second hand on the OP I. That's it.

Neither have a swan neck regulator.

Before you ask, here is a non-swan neck movement. Picture from Eddie Sanchez's 390. This is an OP I. Look at the bottom left of the picture for the pointy arrow thing between the +/-.

Link to his post.

here is my 111G with a swan neck regulator. OP XI. Look at top middle and see how teh same pointy arrow has a curved piece of metal touching the pointy arrow. That is the swan neck regulator, the curved metal piece.

The swan neck is used by watch makers to adjust the watches timing (if off). The swan neck makes it easier for the watch maker to adjust, the non-swan neck is still adjustable, just not as easy.
