Should I hack the movement of my Rolex when it is going to sit for a few days? Or just leave it until it run out of power?

I would never get in the habit of leaving the stem pulled out on any watch because with my luck I'd eventually wear one like that and have moisture issues. Plus, I may be wrong, even with the trip lock crown, there is no WR with the crown pulled out.

The waterproof seals are mostly inside the case, so there is good WR with the crown pulled out. There's just no benefit in doing so, and it might put undue stress on the movement.

let it wind down IMO, no big deal to reset the watch when you're ready to put it back on your wrist

No point in keeping the gear train in constant tension over time. Let it run down and relax until the next time you put it to work.
