Bison steaks, beet salad, green beans, and loaded potatoes. All served with an amazing vertical of Cabernet from Chappellet.

It’s Mexican Discada for tacos…
It’s made with bacon, ham, sausage, pork, beef, chorizo, several kind of peppers, onions, more things if you want….
But those are the basic ingredients to mix.
So everyone grabs their tortillas and make their own tacos.

Do you marinate the meat? Do you use some seasoning? You have me looking at Disco’s to buy now.

There is no such thing as a Discada recipe that I know of….

But here is how I cook it…

No need to marinate before, the seasoning will be salt, black pepper and Salsa Maggi ( closest thing will be worchestire sauce )
Don’t worry too much about the sauce, can do without with only salt and pepper.

1/2 kg beef
1/2 kg pork
1/4 kg turkey ham
6 turkey sausages
100 grams of chorizo
2 sliced tomatoes
2 big chopped onions
4 chopped garlics
3 big chopped bell peppers (try yellow, orange and red. just for the colors)
3 chopped Anaheim peppers
2 chopped jalapeño peppers
Lots of tortillas and spicy sauces for the tacos….

Here is my Tip of how to cook it….

1.- The Bacon, let it throw that grease
2.- The pork, let it cook a little bit before 3
3.- The chopped onions, sliced tomatoes and garlic, stir and try to destroy the tomatoes (as if they were a Fake Rolex)
4.- The beef, mix very well with the rest make sure you add seasonings
5.- Rest of the meats
6.- All peppers and vegetables you want to add

Keep stirring and adding salt and pepper until you season to your taste.

And LISTO AMIGO!!!!! You’re ready to grab a tortilla and make yourself a Taco.
This will serve more or less around 12 people…depending how hungry!!!

I honestly recommend you to get the LODGE 17” pan is the one on the photo.
The pan can easily handle two times the quantity I’ve described.
