Did someone say sushi??? Wife and I decided it was time for some sushi. Just had a nice dinner tonight.

I do really like uni and the sweet shrimp was excellent.


The lightly seared halibut (on lower right) was delicious.


Two types of toro (bottom from Japan and top from Indian Ocean). The Japanese was nice and fatty...so yummy.

..We had a fabulous dinner out the other night...at the Carthage Cafe on Commercial..
Started with escargots and coquilles st jacque, both were excellent... My wife had 'steak Frites..and I, the fish and seafood plate wit saffron rice. Great creme caramel for dessert and cappuccino's......A Great meal...

Made some smoked pulled pork crostinis with a corn/avocado spread topped with pickled red onions.

Smoked our Christmas turkey today following this recipe.

Turned out nicely overall - skin got a little crispy but better than it being rubbery from too low of temp. I used a gallon ziplock of ice on the breasts for 30 minutes before putting it on the smoker to slow the cooking of the white meat down and keep it from drying out.

Tonight we had the Primo citrus brined and applewood smoked turkey, a kale salad, green beans and roasted garlic mashed potatoes, all served with a great Oregon Pinot Noir.

Starting with risengrød, then Crispy Duck with moderate trimmings,.. but can Not do, without the gravy. Complimented with 'Apothic' Red and White, from Ca. -
A very nice wine, IMO...!!

After a 90 minute fat bike ride in the snow, we chilled with a glass of wine and then put together some surf and turf - crab cakes and ribeye - with roasted root vegetables and a kale salad.

Double smoked a ham for Christmas on the BGE. Injected it with maple syrup/pineapple and bourbon, then covered it in a tangy Dr. Pepper glaze. It turned out so great that I made scratch biscuits the next morning for breakfast for ham/biscuit sandwiches.
