Changing time question.

don't believe everything you read on the internet But you CAN believe everything you read on TRF If you pull crown out to furthest position, second hand will stop, so just pull it out when it get's to "12"

For example, if you had a Panerai with the 2003 movement then yes it would reset to 12 when the crown is pulled all the way out.
The automatic watch is outfitted with a power reserve of ten full days made possible by serially operating spring barrels, their reserve displayed by a linear indication with a small hand. Additionally, Caliber P.2003 is outfitted with an intelligent second hand reset system that gets activated simply by pulling the crown, as well as an hour hand that can be adjusted in increments of one hour - an extra very much appreciated by travelers
