It's been a frustrating morning for me. I forgot to get the corned beef, potatoes and cabbage yesterday. I went to the closest store this morning, picked up the cabbage, apple juice and potatoes, but they were out of corned beef. I put it all away and went to the next store. They had corned beef, apple juice and potatoes, but no cabbage! I bought it all, and have put everything into the Crock Pot. I will have to go back to the other store this afternoon to get the cabbage. All this made me late for my first client appointment!

Is there a place to get corned beef other than the vacuum sealed packages I see at the local store?

Okay now, this Forum has been acting funny and still is today. I'm having problems opening threads, posting replies and changing to other categories!!!
Now, I just made a post, it took a couple of minutes to process and then showed up twice!!!

It's been happening a lot lately. Sometimes, people's posts don't show up for an hour or two!

Did you know that corn beef is really a briscut[sp] cut of beef, that has been cured to become corn beef!!! On a cow there are three pieces that can be used for corn beef; crown and to side cuts. A beef briscut[sp] is always the crown cut and tastes wonderful when cooked with potatoes, carrots, mushrooms and onion soup mix. If you want the recipe let me know!!!

I did, but the recipe sounds great - post it in our "recipes" sticky! I'd really like to find corned beef without the preservative sodium nitrate/nitrite, which is probably impossible. So, I might need to attempt to cure my own. This may be a project for next St Paddy's, though.

Mornin' Lisa! Happy St. Pat's Day to you too! I had to wait til 9:30 to get my coffee this morning as I had to go for fasting blood work. One doesn't realize how much that first morning coffee means until one can't have it!

I'm home for spring break too! It's my annual "purging week" as I get rid of junk. It's a March break tradition for me! So far, I'm spending more time here than I am doing THAT though!

Crock pot? Hey....that sounds interesting! I've never made it in the crock pot. Any chance you'd share this recipe??

Hi, guys. The science museum outing was a bust and we ended up at the mall instead, which was fun anyway. The museum, zoo and race track is all grouped together and share several parking lots. The numbers of people out today were incredible - police were directing traffic, all lots for the zoo and museum were full, and throngs of people everywhere - it was like nothing I'd ever seen. So we turned around and left. Might try tomorrow, maybe later in the day.

Did I mention we're babysitting the class pets for spring break? Phoebe brought home the mom and dad gerbils (Violet calls them "bee-bows") and their 6 babies, which are about two weeks old today. They're pretty cute! Eyes should open about any day now.

Carol, Thanx for the article and info on corn beef, you learn something new every day. But I will mention that originally a reuben did not have thousand island dressing mixed in to the kraut(the kraut was plain). I'm now starting to get a craving for corn beef hash. I guess I'll have to go and buy some at the store!!!

Lisa, when I was a kid I raised gerbils and had a lot of fun. The problem is once you have a pair in no time at all you have a zillion of them!!!

Ok.............here's the scoop......I took the liberty of cutting and pasting this from another thread....it explains what's going on with the forum!

Its not you guys.... sigh. The server backup drive had to be reformatted... so today it has to perform a FULL backup which takes forever and slows the server to a crawl. It takes almost all day so there is no 'good' time to run it. After the full backup is completed things will be back to normal. Sorry for the frustration.
