Well, I’m also on the chicken wagon.
But mine is a mojo instant pot Cuban pressure cooker special.

Won’t know for a bit. Then I’ll slip it under the broiler for the crispy skin.

Some Yellow Rice and black beans is a good thought - arroz amarillo congri con pollo…

Working on it…

Went out for a Greek dinner to celebrate my Mrs buying a new (to us) car.
Greek style ribs for the Mrs and I had their Santorini chicken plus a couple of Sangrias.
Was really good...

Our first Sweetgreen opened this past week and my wife picked up a carryout for our lunch. Romaine lettuce was sold out and the chicken was not to be found on her salad. We generally hit and like this chain when traveling, but this time was a disappointment. Well, that put her in the mood to recreate a salad we like, in the style of Sweetgreen. The Kids had one of their favorite treats, peanut butter smeared in jars, keeps them busy for hours.

Six cheese mac with those rich cheeses must be over the top, with the Goo to wash it all down!! I know you enjoyed that feast!!

Use natural peanut butter that is not hydrogenated, with no added salt, bad for their kidneys. Don't overdo the spread, just a thin layer on a butter knife spread all around the inside of the jar. Trader Joe's sells a natural salt-free peanut butter for like $2.99 a jar, but I use my empty Costco Peanut butter jars because they are taller and a challenge for them to clean out.

No trans fats in this house or any seed oils for that matter!

We usually get maranatha PB. Never tried Costco’s pb, but we only eat out of glass jars. Enough xenoestrogens around as it is, don’t need more from plastic.

This was a last minute, 4-hour decision…

Rack of ribs over a pecan and hickory laden charcoal snake.




And if you like them cut or like them torn, the smokiness was sublime.



Over a black bean congri and mixed veg makes a nice rib bowl.

You’re killing me! The sushi in Kalispell, MT is seriously lacking. We got takeout from the one place in town last week and I’ve had better from the grocery stores in Denver.
