If it were me, I'd definitely want a dressier watch like a DJII fluted. However, since you love your Daytona and have an Omega diver, you can't go wrong with a Speedmaster. I'd then sell the SMP and save up for a GMT, YG if you have the dosh. Collection complete

WG Pepsi is cool but no way I'm paying a WG premium for a Pepsi. I'd rather go YG on the GMT II. Pepsi is meant to be a fun watch in my eyes, not a 40k WG. At least until I see it in person, these are my regards.

Not selling or trading my Omega either, that was my very first "luxury" timepiece.

SkyDweller is nice but doesn't really sing to me.

GMT, ideally in WG Pepsi. And why not swap the Omega while you're at; another Rolex, Explorer (orig. or 2) or something on a strap, would round things out...

I agree with Micha, a white dial piece like the ExpII 42mm Polar, DJII white stick, tt DJII cream dial, Milgauss.

Then there's also the other brands you ought to consider. My 2c.
