I bought a 95 Fay when I was out there in May. I am very worried about opening it, especially since the cork doesn't look too great.

Hmm. I adore the ‘82 vintage but would pick ‘45, ‘59 and ‘61 vintages based on personal experience.

We had a 2012 Jordan Cab too. Jordan was good but the 2007 Silver Oak was wonderful!

Sunday afternoon - the perfect time to enjoy a fine wine.
This is a red by the 'Chateau Tahbilk' winery in the Nagambie Lakes region of Central Victoria. It is Victoria's oldest family-owned winery and vinyard having been established in 1860. This wine was fermented in open Oak vats and then matured in French Oak for 18 months. Tahbilk tends to be a fairly traditional maker.
I allowed 5 hours for this one to breathe and have noticed it softening and sweetening as it did so. Now drinking very well. 15 years is about the peak for this wine and I have a couple more left to share with my friends.
