Help with vintage Rolex functions

Hi guys, I am still researching my first entry level Rolex purchase. I have a couple of questions. First, I haven't yet decided if I want an automatic or not. but my question is whether all automatics also have the ability to manually wind, which would be important for me. I have a automatic seiko that you cannot wind manually and I don't like that lack of functionality.

Second, I like a watch with a date function, however I do not like the cyclops crystals that I have seen. Do they make replacement crystals for most vintage rolexes that do not have that feature?
