what is the mean of oyster perpetual??

hii bro, just a new rookie and want to get info... usually at rolex datejust or etc there is sentence oyster perpetual. what is that mean for their strap and we can't change with another strap? like president strap....
because sometime i see there is oyster but the they use jubile strap...
