Rolex Day Date White Gold

Hello fellow owners!

I have recently purchased a white gold day date Rolex, this is my first Rolex watch so I have a few questions.

I need to remove a link from the bracelet, is there any DIY or step-by-step guide or do I must take it to the jewlery store?

How do I set the day and date? I tried to do it so by having the crown unscrewed to the point where it is free of the screw threads and it seems that position is for winding it, right?

Then I pulled out the crown a lil more and I can set the time, if I advance the time I can change the day and date but im sure there must be a way to set the date or day too.

Please help me on this one!
