Winding, etc. 3035

Just to confirm the proper way to handle my new (to me) DateJust.

Here's what I know. It's a model 16030 with a 3035 movement.

Through searches, I have discovered that the crown must be turned CCW to set the date and also to set the time.

As for winding, should I wind it CCW or CW? Does it matter?

Also, when I'm unscrewing the crown, there is a sound and feel like it's 'winding' the movement during the unscrewing process. Is that normal?

So far, this watch appears to be more accurate than my new SubC, so I'm pretty happy with that!
