Breaking stem and water resistance issues only for 5402 and cal. 2121?

So I have been looking at some of the 36mm ROs, and wanted to inquire further into whether AP had similar issues with the crown breaking off with models outside of the 5402, I also read in the sticky above that AP cannot certify water resistance in the 5402 following service, does this only apply to the 5402 or other models as well?

For servicing out of warranty APs, can you tell AP to do movement only services like you can with the RSC, like tell them to leave the bezel, dial, etc alone and just service the movement and restore water resistance?

I haven't had a chance to put a 36mm RO on my wrist yet but I have a 6.4" wrist so I'm thinking it would be better suited to me in diameter and thickness than a ROO. Also as I am looking for something to where for the most part with button downs and sport coats, it won't cause as much issue with cuffs but would like to have something that I have to worry over on a rainy day, remove while washing my hands or suffer a broken stem every other year from winding and setting.
