Advice on my collection please!

I have more watches than I wear (or want to wear), and most are spending their lives in my bank's vault. I am thinking of paring down to consolidate and clean house. I already flipped my Deepsea for an SD4K for daily use, so that was one step at least.

Onto the collection: I want a mix of a few usable daily watches but also the truly collectible watches that speak to me and which I'd have trouble finding again. I wouldn't mind dropping some of these for a day date (1803, 118139, 118135, or 118239), or an early Daytona, or something big like a Patek 5960.

Here's my stuff broken into categories of my love for them:

Would sell:
Sinn Ezm4 Achilles
Sinn 140A (full set)
Rolex 16800 transitional matte dial
Breitling Navitimer A23322 (full set)
Breitling Chronomat Frecce tricolori (full set)

Should keep but could sell:
Rolex 116600 sea dweller 4000 (full set)
Rolex 1500 date (recent rolex service dial/hands)

Must keep, won't sell:
Rolex 1655 freccione
Rolex 1665 great white
Breitling Navitimer 7806 (box, no papers)
Omega 3570.50 (full set)
Patek 5196g (might sell for another Patek)
