X3... another vote for Charcoal.

Years and years ago, my dad grilled using charcoal until he got a gas grill.. which he also had for a long time. I only had vague memories of how good meals prepared on charcoal tasted. Fast forward a number of years and my wife and I bought our first house. Figuring some day I'd put a permanent gas line in after seeing how hassle free my brother's grilling is (he has a natural gas line to his grill).. I needed to get something in the mean time. Remembering that I had some delicious meals with charcoal in my youth, I searched craigslist and found an old Weber Kettle for $40.

I re-discovered the awesomeness of a charcoal grill. These are so versatile.. you can grill fast & high heat.. or you can bbq/smoke low and slow. I am just getting into the low & slow aspect.. so amazing what can be done. Soon I plan to try smoking prime rib followed by perhaps a brisket.

Folks sometime complain that it's a bit more involved.. it takes a while to fire up (hey.. it's time to do your other prep work!), they are a bit more difficult to clean.. but I dunno.. I like tending the fire and some of the detail that goes into some of the longer cooks.. and the end result.. a REALLY great tasting meal!

I now have two grills.. both vintage. A 1977 faded black 22" and a 69 or 70 red 18" (don't mind my upcoming spring project.. sand & stain the deck!!)

There is a place I found this year online.. weber kettle club.. good resource there.
