How Does One Polish a Watch With PCLs?

No, I am not thinking about doing it myself. No, I am not thinking about having it done. However, I just watched this:

And it seems like they polished the whole band and then filed the outer non-polished links of the band. Is that how it's done? I always assumed they covered up the non-polished parts with something like painter's tape and just hit the PCLs. The way I described does seem quite destructive.
