Meat rubs are pretty simple... I have done ribs before. I am sure that fellow probably has his own recipe, but this one will probably work...

This is another awesome rub that I make - Reata Grill Blend (Grady Spears' restaurant blend) 4 tablespoons kosher salt 3 tablespoons Pasilla or other strong chile powder 2 tablespoons dried granulated garlic 2 tablespoons sugar 2 tablespoons ground cumin 2 tablespoons coarsely ground black pepper 1 tablespoon ground thyme I replace the Pasilla powder with Chipotle powder. Makes the rub hotter and smokier. Killer on steaks. |

My friend is wearing a Seiko watch.
OK, here is his Texas pork back ribs recipe... Rub for 4 to 5 pounds of pork back ribs Mix the following ingredients together and rub onto the meat until the sugar is fairly well absorbed. Do not leave clumps of sugar on the meat because it will burn easily. Put the meat in the refrigerator for 1 to 2 hours before cooking. Cook over a charcoal fire of 250 to 275 degrees until meat is well done. ½ cup brown sugar 1 tbsp paprika 1 tsp salt 1 tbsp chili powder 1 tbsp garlic powder 1 tbsp onion powder Use the following basting sauce while cooking, turning the meat every 10 to 15 minutes. The Basting sauce: Basting Sauce Put the following in a small sauce pan and bring to a boil. Cook for about 5 minutes. Use this sauce to baste the meat periodically until the meat is done. Note that this is a fairly clear sauce with nothing in it that will burn. 1 cup water 1 cup vinegar 1 medium onion, sliced 1 tbsp salt 1 tsp red pepper 1/3 cup butter Juice of one lemon Believe me, these make some wonderful ribs! Nope not NC, Dude, he is from Texas. but perhaps the basting sauce is similiar to what is used in eastern NC.
My Texas friend prefers beef ribs to pork ribs. Texans like their beef! Cheers, Bill P. |
