Funnily enough I'm planning to do the same thing. I've got a few that don't really get worn enough to justify keeping them (and condensing my collection down might be refreshing)

Trade 3 watches for AP Jumbo?

Well, at this point after some contacts with trusted sellers and such it doesn't seem financially viable to make the trade without a significant output of additional cash. That being the case I'm going to bide my time and enjoy my current watches till I'm in the position to buy a Jumbo outright, or possibly just trade the Sub and IWC. I agree that the 1680 is a definate keeper...

Keep the 1680! The rest isn't necessary... The AP is a perfect dresswatch - so you won't need the Reverso. But I would consider the Patek Nautilus 5711 as well. Perhaps you will change your mind...
