So something quick and easy. Grilled Costco beef loin flap steak. My Weber has bit the dust - one of the legs collapsed while moving during the Winter. And the gas grill is on its last legs - so this has to be a quick flash grilling job.
Started a few hours ago with a dry rub of a DIY “Montreal-like” seasoning blend. Some Dill and Smoky Paprika to the regular onion, garlic salt & pepper. This is a light coat as something more saucy is coming to the party. Those things are looong - must cut them for the grill later. More later when grill is hot, hot, hot. Mid-60’s Weather is nice but makes it a bit slower fire as the burners are on their last legs. Miss those 90° days to add some heat.
But went pretty fast... And for some reason the grilling directions for this cut says to leave uncovered while they rest. I guess went a bit long on the thinner portions than should have.
