It depends what your daily activities are, but for an average guy like me who doesn’t actually need the watches for their specific functionalities, I choose the Sub as my goto watch.

Both are amazing, but on the rare occasion I see an Explorer II in the wild I always think, damn there’s a guy who gets it.

If you get a Sub, then sooner or later you’ll also want a Rolex with a GMT function. If you get an Explorer II, sooner or later you’ll also want a Rolex diver with a rotating bezel. Bottom line, it doesn’t matter which one you get first because they are both fantastic choices and, sooner or later, you’ll own both.

The orange GMT hand on the black dial of the ExII is my favorite thing about the watch plus the 42 mm

Sub is the iconic Rolex but the Explorer II is a masterpiece as well. If I could justify a Smurf, though...
