Woah, I want a Cookie Monster at $25k for sure! Holding out hope still. But like someone said, if the prices are that low, there are a lot of other things to worry about..

Kermit/Starbucks for a Cookie Monster? Absolutely. Now that the prices for the Kermit is going up and Cookie Monster going down, its the best time to do it. I used to own a Smurf as my one watch collection from 2015 until last year. Bought it when no one wanted it and sold it last year when it was at its peak. White gold prices will always come back up in the future.

Sorry but I know the line is always how much easier the gold scratches compared to stainless steel on Rolex watches but I’ve never experienced any noticeable difference.
From my experiences over the last 30 years is I never scratch the case at all on either metal so it’s irrelevant gold or steel.
The only part that ever gets any scratches on my watches have been the polished centre links on the bracelet and particularly clasp and even then I’d say the steel isn’t any more resistant than the gold

You might be surprised what pricing an AD might offer you on a WG Sub in this declining market. I'd try really hard at an AD straight up before the hypothetical buying and selling scenario you outlined.
