Answer is...Due to the color spectrum and ultraviolet light. Pilot need to see full instruments. Back then it was just all flat black on pilots back ground displays.Now its all electronic display. Mangeta ,chrome yellow, purple all sorts of colors. You can adjust contrast and brightness so the grey in neutral so it enchances the CRT's in the flight deck.

Here's a pic I took this afternoon, gave class to a kid in a 2.5 mil Euro home and this was his garden view!
Oh, and I make 20 Euro an hour. Hahaha
