Old Bulls Never Die, The Just Go To The Kitchen...
Many years ago a young man visited Spain and was introduced to some of that country's pastimes and local cuisine. Bullfighting was exciting and he enjoyed the spirited way the Spanish attacked the game of football (aka soccer). A few dishes like Paella and Arroz con Pollo were among his favorites - but one stood out for it's unique balance of flavor and texture, Bolas de Toro. Yes, the testicles of bulls killed in the ring!
When he returned home he would seek out Spanish restaurants to enjoy the food and memories of his travels back in Spain. But none offered his stand out favorite, Bolas de Toro, they always explained that their suppliers didn't carry the ingredients needed to prepare the authentic dish. A few years later this fellow met and married the girl of his dreams and he wanted to share his love of Spain with her - so they planned a European honeymoon with several days scheduled for Spain. One night during their time in Spain he took her to the same restaurant that prepared his favorite dish. He knew in his heart that he would wait until his new wife tasted the Bolas de Toro before telling her the main ingredient or she'd never try it. So he orders the dinner and wine and watches with anticipation as his bride digs into the entree - but after a few bites she looks up and says, "Dearest, I don't want to disappoint you but these things are chewy and rather tasteless". So he digs into his portion and notices the taste is really different and more grisly than he remembered. He complained to the waiter and asked if the testicles were fresh. The waiter assured him they had just come in this evening. Still not satisfied with that answer, he signaled the manager over to their table. He complained about the quality of their Bolas de Toro and that it was much better when he visited a few years ago. The waiter shrugged and said, "Señor, el toro no siempre pierden!" (Sir, the bull does not always lose!)
