What's for dinner guys....?????

Quote:
8 pounder before Thanksgiving. I think it came out pretty good.

Skin looks perfectly rendered but it looks like it pulled off the breast which will probably make that white meat dry.

Look into using the spatchcock method. It’ll loosen the skin so it stays put and results in more even cooking of the white and dark meat.

That's on me as the recipe called for separating the skin from the meat and putting soft butter in-between which exposed part of the breast. I've got to do a better job for the Thanksgiving turkey. Fortunately, because I had the bird in a homemade brine for 2.5 days, it was extremely moist with only a hint of over seasoning flavor on the part that was exposed.

I've done the seasoned butter under the skin - including one that had citrus and rosemary in the compound better - and that works great. When combined with a brine, you are going to have a great tasting bird on Thanksgiving! I've used Alton Brown's brine recipe before and loved the results.

I guess part of being retired is not just saving steak for the weekend. Served with one of the phenomenal local wines.

I made pozole today using some leftover pulled pork that I smoked for 20 hours. It was outstanding. My wife made fresh chips and guacamole to go with it.

The flavor was fantastic. Next time I’ll course chop the pulled pork to make it easier to eat with a spoon.

Looks spectacular..and perfectly smoked. The veggies look wonderful...but have to ask..how did the white meat turn out...? Sometimes it can be dry...but I'm guessing not, in this case.
Kudos to you..

Thanks you. between the 48 hour citrus/herb brine and the slow cooking, every part of the bird was moist and tender.

Not dinner but an amazing lunch here in Vancouver BC. Tom sushi; cannot recommend highly enough! I am an absolute sushi snob and when I got into town I talked to a few locals who said “oh just go to any of them they are all great!”

Bold faced lies. Some of them were absolutely terrible (looking at you, only sushi place in Granville Island market where literally everything else is pure food magic).

This is THE spot to go. Plan on having to wait for a table, but worth every minute spent standing outside in the cold. Had the Bluefin Sashimi platter and had to go back for more o-toro nigiri. Truly exceptional!

Looks amazing. Good sushi is one of the things I miss most about living in western Colorado.

Thanks! And yea especially since you’re from here you gotta go! It’s in the Davie Village neighborhood, but as long as that’s not a dealbreaker for you the food was truly some of the best I’ve had, not just sushi but food period.

Had the neighbors over for dinner tonight and it was excellent. We did lamb chops, roasted brussel sprouts, beet and goat cheese salad, and fingerling potatoes.
