Tried some St. Louis style ribs for the first time on the egg. It was a nice change from baby-back.

Smoked for 3hrs and wrapped for an hour in foil. All @ 225. Then unwrapped and sauced on the grill (indirect) for 10 min.

Yep. Baby backs for 2.5 hrs indirect after rubbed with mustard and spice rub, 1.5 hrs foiled bone side up with apple juice and Tiger sauce added, and 1 hrs back on the smoker with sauce added 15 minutes before pulling them off. They finished just shy of fall off the bone - just a little bit of pull to them, but then break away from the bone cleanly.

We spent the evening eating our way around PA's largest fair. I feel like I gained ten pounds! Sitting next to the grill, hot Italian sausage with onions and peppers, Yummah!

Quick trip to east coast, went to No Name restaurant in the seaport area of Boston. Sautéed lobster, scallops and shrimp with rice pilaf and a nice IPA.
