Blue crabs, garlic, ginger, red onion, anchovies, mussels sautéing in butter and white wine.

Could be the beginning of a bouillabaisse except for the two chillies I added.

Prawns, scallops and tomato to be added soon.

Will serve it with pasta.

Kind of a low key day here - football and cooking to stock up the freezer. It’s snowing and in the low teens here today. Made some beef (bison) stew with left over bison roast, split pea soup, nachos for the game, and short ribs for dinner. Pulled a nice Petite Sirah from the cellar to go with the short ribs.

Thanks and yes to both. We added an 09 Chappellet Cabernet Franc to the night too - also fantastic.

We’re going to be in the RV for Christmas, so I brined and smoked a turkey this weekend and will reheat it in the sous vide machine on the road. Used a citrus brine and citrus and rosemary compound butter for basting.

Been having fun letting my kids come up with dinner - today was my six year old’s classic combination of king crab legs, creamed spinach, and rough mashed potatoes.

Last week the 9 year old wanted smoked wings, peas, and angel hair with butter/parm.

Wow. Talk about advanced. The kids I know would have picked Mac and cheese and chicken nuggets.

Put the turkey I smoked a few weeks ago in the Sous Vide machine at 10 am and didn’t take it out until 5 pm for dinner (not intentionally, the mtn bike ride took longer than expected) and it was perfect! The skin fat rendered down more and distributed into the meat. Didn’t have a carving knife so it don’t look pretty but tasted great. Also made a pumpkin pie in the convection oven. Not bad for Christmas dinner in the RV.

Christmas Eve Dinner...
My wife's Danish tradition...
Risengrod, the Duck with sugar browned potatoes, red cabbage and gravy with appropriate wine.
Whoever gets the almond in the risengrod wins the Mandelgave.

A southern cult like following meal - Conecuh sausage. Now that we’ve tried it, we get it.
