As far as 10:10 and/or 10:08, it is done for several reasons.
1. symmetry. Our eye likes a balance of left and right.
2. Tends to allow the writing on the dial to come through.
3. Makes the watch look like a smile.
4. The hands take the shape of a chevron/check mark which is pretty much a universal symbol for "approved".
I think that the reason, from photographer. And the smile watch is good reason too.
