RSC are generally known to do a very good polishing, I would not mind having them do it. If done by a pro you can't tell and your watch will look brand new.
For reassurance you may emphasise a light polish only.

Haha I took a watch to a dealer once and during negotiations he said my watch would need a polish before he could sell it blah blah blah to drive down my asking price. Then I took in a freshly polishes watch looking for an offer and he said it would have got a better offer unpolished. Polished or unpolished it's just what you want really, and NEVER trust the word of the dealer.

I think people use the term "over polished" when the original shape and dimensions of the watch are drastically changed.
That said, I agree with many that people are going overboard in the polishing paranoia.

I wonder if my car is "over waxed"
