Did all LV model years originally have chamfers or some did and some didn't? I think Rolex did away with the chamfered lugs at some time during the run from Y to Random serials.

No they weren't.
The watch has been verry well used over the last 10 years or so. There's no coming back from that sort of wear and tear unless the parts are actually replaced.
Have a look at the extent of the wear in the links of the bracelet and the resultant polish job all over the watch.
They did a nice job considering what they had been given to work with. IMO.

Rolex do not reinstate/repair dings and scrapes by welding and the extent of the work probably would've precluded an overall weld repair on tbe basis of cost. Unless one could actually do the welding themselves
Most likely it would've been more economical to replace the parts.

None had chamfers to speak of and all were quite sharp.

Yes it sort of does look pretty cool

The job they did is very uniform all over the watch and a very respectable result was achieved given the original condition it was likely sent in

I have one and it clearly has chamfers. V serial. Also pretty sure it's unpolished as I took off the stickers.

Agreed.
The chamfers were there and certainly more pronounced than is the norm now.
The chamfers were not very profound and much less than are shown on the OP's watch after service.

I reflect on my own examples of the new watches i bought around era and the chamfers were very small.
I can't remember any stickers to be peeled off though, with the only exception of the Green hologram on the Caseback.
My Flat 4 Kermit was the last one out of that era before i eventually moved onto a 6 digit model.

OP's chamfers may not be original but it still looks great.

That watch will definitely glisten more in certain light with those wider chamfers... I'm digging it! Keep it as is!

It reminds me of those sexy chamfers on the Black Bay. Another vote to keep it as is.

It should’ve come back looking original. I would be pissed and request a new case at no charge to you!

But IMHO this is what you should keep until the next service. Ultimately you’ll get new scratches, dings, etc and you can address the issue some 10 years from now.

Comparing a 116613LB vs 16610LV is like apples and oranges.
Imo the LV from OP looks awesome and I would not change a thing.
Usually only RSC Bexley London is known to create such beautiful bevels. Good that Koln is following.

I'm going to go against popular opinion and say that this "service" job essentially destroyed the watch (as well as tanked the value).

It's an irreversible job, and this watch never came out of the factory with these kinds of chamfers. If you yearn for vintage, buy vintage! To me, this is a mod.

If RSC performed this on my watch, I would be absolutely furious and it would no longer be wearable for me.
