For a one and only watch I personally would go with a Datejust or an Oyster Perpetual (36 or 39). Goes with a suit, to jeans and a t-shirt to shorts and flip flops and more. Versatile.

Buy what appeals to YOU. For me, if I could only have 1, it would probably be a black TT Sub. It's dresses up an down with ease, and can take a beating.

Everyone has different taste so it is difficult to make conscious advice without knowing what is your current collection.

Saying that Sub as design is always good choice for one and only. Regardless compilations and materials which can be selected as per your personal preferences. i.e. SS, PM , TT , Date, No Date.

I'd second both these points here, you really can't go past the versatility of the DJ36 and you won't have to worry about dealing with grey market/actually pay retail for the watch too.

SS DJ with a silver stick dial would be a great one watch collection. I prefer fluted bezel/Jubilee but smooth/Oyster is also nice.

Not any more. It used to be the case but most of the sought after oysters aren’t available to even browse at the local AD anymore. Looking for an SS professional model is more like searching for the proverbial needle in a haystack.Or paying way more than msrp at a gray dealer.
