Homemade shrimp ceviche and bruschetta made with goat cheese, ripe figs, arugula (to get both the bitter and sweet flavors) carmelized red onions and finished off with a balsamic vinegar reduction.

One of our friends has been in Spain for the last year and house sat for us while we were in MT. She’s cooking an amazing dinner for us tonight before she heads back to Spain on Monday.
