It was..thanks Randy. Last night NYE (and 38th Anniversary) I was doing the cooking and in tradition was Italian,..started with soaking the baccala for 3 days ..frying some and using the larger pieces for a tomato based stew. Only got a pic of the antipasto, which was followed with linguine and anchovies and oil (sounds weird but it is good) and the stew. It all turned out really good according to my wife and our guests so I can't argue about that....

Far humbler here on the first day of 2023. A Southern thing - the tradition of eating black-eyed peas for the New Year has evolved into a number of variations and embellishments of the luck and prosperity theme. Here’s mine:

Spinach not turnip or other greens.


Rice seasoned with the first hour’s broth (often called “pot liquor”).


With an hour to go…



And now bubbling away for final thickened dish.


Final assembly pending

It's been a while since I've posted here. Was feeling nostalgic yesterday and decided to make something we normally make during backyard summer pool parties. Cajun Shrimp Foil packs. Shrimp, smoked sausage, potatoes and corn with Bay seasoning, Kerrygold butter and lemon.

Thanks. The brisket got wiped out and since I was up at 3 AM babying that, I’m very I’ll happy about that. Had some issues with the temperature controller last night, but it all worked out in the end.

I'm a diehard tenderloin man, and my butcher was out of grass-fed start to finish, so I tried these ribeyes, and damn they were spot on and $20.00 a pound cheaper, cooked to perfection med rare, always my wife's favorite, I might be coming around, and the kids loved them too!

My wife picked up a four-pound Pork Butt and cooked it in a dutch oven. My initial thought was since we weren't smoking it, was a complete waste of a great cut of meat. Well I stand corrected, it was flavorful and juicy and the bark she was able to create could have fooled me it wasn't smoked. Bravo to my better half!!

Wow...that looks pretty awesome... um, never under estimate the power of a woman.... Obviously the 'kids' I think approve..kudos to your Mrs. .
