Outstanding!

We just had our furniture and boxes delivered to the new house and are far from unpacking everything, but I fired up the Primo XL grill/smoker and cooked corn on the cob and some shrimp with homemade dry rub to go on a cool green salad with creamy lime dressing.

Thanks. Not the best meal we’ve done at home by a long shot, but man we are both tired of eating takeout. It was great to have a home cooked meal tonight.

Didn't shoot dinner - meatloaf isn't really photogenic

But my twice baked brownie cookies came out fine...

Guess where I'll be in July?! Not Copper River, but farther NW near the Yentna River confluence, doing my best grizzly bear impression fishing for salmon.

.

Fired up my big green egg last night to 600F, added rough cut 60 year old drowned U.S. whisky barrels for smoking flavour and put two U.S. dry aged tenderloin steaks on the cast iron... what a taste. I love U.S. meat. Question for the U.S. members: how much you pay for dry aged tenderloin steaks? Here in Switzerland I paid 122$ (incl. tax) per 1 kilo =(2.2 lbs).

Fired up the Primo again tonight to do some chicken thighs for dinner. Feels so good to be cooking at home again. All the take out for the last few weeks during the move was way outside our norm.

I can’t express enough how good it is to be eating at home again rather than doing daily door dash during the final days of packing for the move, then waiting for furniture, and finally getting started on the unpacking.

First dinner at a nice restaurant in Palisade since we moved in and I’ll say it was well deserved after a long week of unpacking, setting up the shop and garage, and lots of landscaping cleanup. We’ll be back for sure, although it’ll probably be in the off season as this place fills up fast during the summer tourist season.

Paper plane cocktail - going to have to make this at home!

Hamachi served on an ice block with a citrus, melon, and cucumber ice

Roasted figs with mascarpone, pistachios, corn, and mixed greens.

Ribeye with chimichurri, grilled romaine with Caesar dressing, and fries with a pesto dipping sauce

Vietnamese Ga - chicken with pork belly over rice and a mango salad side.

I was skeptical on the paper plane, but a good friend recommended it to me a few years ago and I saw it at a speakeasy and loved it. I had forgotten about it until this dinner, but I’m all in now.

What's for dinner guys....?????

Toying with the idea of selling the Weber Genesis II natural gas grill. Talk me out of it?

I don’t have a quick connect yet at the new house to hook up the Weber, so I’ve been grilling on the Primo for a week now. I’m really enjoying it for grilling, in addition to the smoking I’ve been doing on it for the last 9 years.

Tonight I grilled filets on the Primo XL charcoal grill, which were served with a citrus and olive oil dressed fresh green salad topped with shaved parm and pine nuts, as well as pan roasted fingering potatoes.

It was excellent. Considering we not live in a small town of 3000 just outside a town of 65,000 people, we’re lucky to have a restaurant like this.
