It was a beautiful day in South Florida and we decided to skip Sunday brunch and stay poolside.

My wife called me in around lunchtime and surprised me with one of my favorites.......Swedish Pancakes

Oh man, I'm glad she's back.

My mother used to make something similar. She would put raspberry, blueberry or any kind of jam inside. She called them German Pankakes. She still makes them on occasion for one of my nephews.

Did she make the batter the day before and let it sit in the fridge overnight Paulie?

Sometimes. I have seen her and my grandmother make them either way. It all depends on how many were coming over for breakfast. I think out of all of my aunts, cousins and friends, one of my nephews and I are the only ones who don't like them

What don't like them?

Must be cause they're German pancakes.

Poached file of Trout in a whitewine sauce with shrimp, mushrooms and mashed potatoes accompanied by an ice cold bottle of Piesporter Falkenberg.
