That is unfortunate...I agree she was probably trying to steal your watch, maybe thinking a spring bar would pop.

I spoke with someone from rolex today. The springs in the strap are designed to break under a reasonable force incase say getting it stuck in machinery. And therefore it is most likely she would be trying to replicate this and therefore to steal the entire watch.

If it had been a NATO, she would have got it..

If you put pressure on the spring-bars and wiggle, you will compress the little ends out of the lug holes.. Works too on leather straps or any bracelet with enough play.

Any pick-pocket will probably try a few watch-grabs before they are successful.. but after a days work, they could have quite a haul

the bezel? definitely going for the whole watch without question. I don't think anyone would put that much effort in and pass on the whole watch, I don't care what watch it is, because the bottom line is, if you were a thief and you knew enough about watches to know which bezels were rare and valuable I would think you would perfect your craft take the whole damn thing and make even more money. A thief is already taking a risk I just don't see removing a bezel on a watch someone is wearing as a good risk/reward move. I dunno I'm not a thief, but that is just common sense to me.
