Multiple Sports models or all the $ in one watch?

Multiple. Whether Rolex or any other brand- I get bored easily, I like different watches for different moods.
From an "investment perspective", it might be unwise to put all your eggs in any one current production watch that's trading for so much over retail

Over 30 years of Rolex and my standby recommendation if someone asks what model Rolex should they get and me thinking it’s going to be a one and only that embodies the Rolex look……A SS Submariner in what ever color/config. Most will be the happiest in life and traveling on vacation with a SS Sub.
