If I understand well, it's not about the SAME condition watches + NOS papers.

So I don't think it's about "NOS" stage, but about a prisitne condition vs used. This difference does NOT disappear just because you start using the watch! With daily use, of course, it will no longer be in NOS condition, but it can still be in much better condition. Plus, if the OP sells it later, it's still possible that he can get the extra back because of the better condition.

seeing this I'd say 100% get the NOS.

OR use the NOS pricing to leverage a much MUCH better deal on the used one.

I think we all kind of assumed we were looking at an excellent condition, similar example vs NOS. Not that the used watch there is in horrible shape, especially considering it's unpolished, but it's not in good shape lol.

If option A is has deep dings, it could be worth 2.5k more just for a nice condition sharp case for me. The 5 digit subs have weak crown guards. Not the easiest to polish back to original. If for example, we are talking 13-15.5 I’d go NOS for 15.5 all day.

If it costs 2500 or more to laser weld and service an option A watch to get it into perfect condition, I’d go with B. I’m highly skeptical of NOS, particularly for a watch that old. I’ve seen more than a few advertised that clearly had a bracket that had been lightly polished and the stickers were wonky.

Option B, NOS. Really not that bad of a premium on the scale of things. NOS to me means all plastics in place, tags, box, cushion and papers. Without the plastics it may have some mileage. Also the NOS may still require Rolex service as the lubricants may have dried up due to the passage of time. Good luck. Cheers!

Another way to think of it, would you buy the Option A watch and be willing to spend $2.5K to make it as new if it were possible (it's technically not possible because they'd have to refinish the case since it has dents and scratches and you'd lose the factory original finish)?

2.5k doesn’t seem like the end of the world for such a special piece, if it is in-fact really NOS and a full set.

yes they do, I purchased a 16610LV in such condition recently. However the premium over a used piece was $6k…
Since this is the only watch I wear, the premium is worth it to me. YMMV.
