No, afternoon tea. Tea can mean many things in the UK depending on where you are from. Northerners use the term tea as dinner/supper. Whereas southerners(Me) it just means the drink (Put the kettle on)

So high tea does mean supper(5pm-7pm, at least up north) And afternoon tea is really a posh meal snack (2pm-5pm)

But where we really excel is biscuits, this is one of my favourites websites, keep clicking "more>>" to see all the varieties. (The reviews are hilarious)

Do you like fish? Here is a little recipe I've developed over the past months, you'll need:

- Salmon filets
- Worchte...Worstsher...Wostre...the black sauce with that strange name!
- Tabasco
- Bifteck spices
- All-Spice spices
- Pepper
- Lemon juice
- Butter
- Vegetable oil

And here's what you need to do:

- Take a frying pan
- Put a bit of oil and a bit of butter (not too much of them but the oil will prevent the butter from burning)
- Pour a bit of lemon juice on the mix once the butter has melted (you can put a bit on the fish as well but too much of it won't be very good)
- Put the salmon filet in the pan and add the spices on it
- Turn occasionally until fully cooked (be careful when you turn it, you don't want to break the filet)
- Serve with a mix of brown and wild rice, you can also cook some corn or broccoli (another thing I like to do is take a can of diced tomatoes and mix them with the fish while it's cooking but it's up to you)

Voilà! There's nothing really fancy in that recipe and it has been mostly improvised (the oil and butter thing was my father's idea) but you can always give it a try.

And here's a little bonus, a little (and very simple) mayonnaise sauce recipe for it, you just need to mix those:

- Mayonnaise (insert a big duh here...)
- Two types of mustard: Dijon and à l'ancienne
- A bit of lemon juice
- A bit of Wors...sauce
- A bit of all-spice (pepper should do it)
- Perhaps some relish would be good in the mix but I've never tried it...

Again, this isn't something really fancy but I have a lot of fun doing that, the most important thing (as I've said) is to make sure you don't break the filet when you play with the fish in the pan.

I forgot to tell everyone but on this past Tuesday, July 10th, I was the guest speaker at our town's Garden Club and did a program on soil amendments and their attributes. Instead of being paid a Speaker's fee I said they could save their money(and budget)and offer me a year's membership instead. I brought perennials(a perennial Geranium sp.-commonly called Cranesbill with creamy white with a slight hint of pink to their flowers) rooted in pots from our garden and gave them away to all who wanted them.

The other club in the South Suburbs of Chicago will have me give a lecture this fall and have asked me to join as well. I have already given them perennials for their annual club sale last month and spoke to the membership about perennials and growing conditions in the South Suburbs. They have also given me a free membership as well. And the late afternoon and early evening on Tuesday, July 10th, they had their annual garden walk which I was invited too and participated in.

Next year both clubs have asked me to have our garden included in their garden walk tours and we have agreed to be apart of these tours. I have given out my biography information(back round and personal experience-I was taught and brought up on old school techniques) and my phone numbers and have expressed to both memberships I'm available for answering questions, coming to their home for consultation and available for everything horticulture except actually doing the physical work. Now if they want me to design mixed flower beds and borders I will be on the clock and charge them accordingly.....and my rates start at $125.00 per hour and full landscape plans begin at $500.00 and go up from there!!!

I thought we had some.... have you tried a TRF search for "recipes?"

Along these lines... do you grow your own herbs? We've got basil, fennel, mint, oregano, sage and rosemary and I try to use them in as many recipes as possible. Fresh herbs (as opposed to the dry stuff off the grocery store shelf) add a lot to a dish!

LOL! That's OK Lisa, most Americans do refer to the above as a 'biscuit'. To us, it's a 'scone'.....and what you refer to as a 'cookie' (as in chocolate chip, etc.), is what we call a 'biscuit'. Phew, have I confused you more?!

Carl, your recipe sounds interesting, except for one thing. I hate cooked salmon. (I love smoked salmon - we call it lox among my people) and salmon tartare. I even like raw salmon as sashimi and in sushi. It's just the cooked salmon that is a no-no for me.

We also went back to Weight Watchers this week. I need to lose a bit more than 20 lbs. So I think your mayo sauce would be a few too many points, as would that Oreo cookie (or bisquit as the Brits like to call it). Two normal size Oreo cookies = 4 points. That one looks like it would be at least 40 points, way more than my daily Points Plus allowance.

The cookie isn't mine (boy do I wish though!), in all honesty I don't think I'd be able to eat that myself!

The Mayo sauce may be indeed a tad too fat for somebody who wants to lose weight, it isn't necessary anyway but rather interesting when you have fish. As for the salmon, I don't know if you will notice a difference but it would also work with trout! In fact, I'd do this with any type of pink fish but I wouldn't do it with white fish, I actually have another recipe for those and they're cooked in the oven rather than in a pan.

Trout is OK, Carl, but I'm not keen on any pink fish. I much prefer white fish.

For the potatoes, I've never personally tried it but I'm thinking it would be great to get baby potatoes, put them in a glass plate (again, I hope you have a couple of those! ) or an aluminum plate with a bit of oil and add some herbs (herbes de Provence, basil, oregano...anything goes). You just need to let them roast, I'm sure it would be lovely!

Exactly. And it has to be cream gravy, ideally with little bits of crispy-cooked sausage patties in it. And lots of salt and pepper.

Arleen loves that stuff. There's a place we go to every October for a weekend getaway called Graves Mountain Lodge (I've posted pictures from there in the past) and they serve bisquits and gravy on Sunday morning for breakfast. Me, I just do the scrambled eggs and sausage patties.

Exactly, Lisa. If it doesn't have those scraped- off -the- bottom- of -the- cast iron -skillet- crispy bits...it's not really even gravy, is it?
