Started off a great night with some 40 year old Highland Park. It had a plastic note when consumed neat. But the addition of a few drops of water caused it to blossom with beautiful citrus and floral flavors.

Closed out the night with the greatest distilled beverage I have ever consumed. This rare bottle (probably less than 200 bottles out there now) of Karuizawa was insanely good. Literally an explosion of flavors that seemed to last forever - coffee, chocolate, citrus, floral, sherry. This will literally raise your blood pressure and heart rate, it was so damn tasty.

Help wine experts! I was given 2 bottles of Joseph Phelps Insignia 2013. I was advised not to drink it for a few years. How long should I wait? Im new to the wine world but am really enjoying the learning process! Thank you.

Congrats on an a very nice gift!! Aging wine requires ideal temperature, and limited exposure to light and vibration. Do you have a cool dark place to lay them on their side?

Honestly to have them show their best, I'd say 10-15 years. If you store them in less than ideal conditions, maybe 3-5 years. But, he's right, you need a place that does not swing in temperature and is relatively cool. Temperature swings will ruin wine in short order. If you have an undisturbed area in a basement, that would work well. The kitchen is the absolute worst place in the house.

I have a closet under my stairs that I have been keeping wine. But I think these are the first bottles that I have that need aging. It stays pretty cool in there. I am looking at getting a wine refrigerator that has 2 zones. Thank you for the response! Lots to learn.

Not sure about delivery. The Vons in La Jolla has a nice selection of quality wines. I find myself at one of three Vons a few times a week so I tend to buy the wines we like on sale. They seem to cycle sales whites and reds. The Veuve is $39 a bottle right now too.

70 would be *okay* but not great as long as it didn't deviate more than a few degrees from winter to summer. That being said, it's going to speed up the aging rate and your window will be significantly smaller for them to show their best. They probably won't be as good as a well stored bottle at 55 degrees, but will still be damned good. At 70 degrees try the first bottle in 2-5 years, and the next at 4-7 years. Ironically enough, when you drink them they should be cooler than 70...more like 60-65 degrees.

To give you perspective, Insignia in a 55 degree cellar could go 15-20 years easily.

honestly austinp, I'd consider drinking at least one and maybe both now if you're storing in a closet. Aging is fine and fun but not always necessary, moreover these wines are delicious young and you should taste one to see what you think. These wines are not exclusively meant to be aged, they are excellent when young AND with some age, but aging in less than ideal temps is risky, JMHO

Very good points brought up about the merits of aging, and what's necessary to enhance the probability of your wine successfully aging for years and years.

I'd also add that everyone's palate is different. Some people like their cabs young, others like the additional evolution that often happens when they've been laid down for several years or longer. If you have experience with quality Napa cabs that have 10+ years on them and liked what you had, then definitely invest in some proper cellaring solutions and wait patiently.

But at the end of the day, it's definitely just #firstworldproblems if you're struggling with drinking Insignia now, or 10 years from now!

Blessed to have had these last night. While the Bonneau du Martray would typically be the star, the Coche Dury was just stellar.

And thankfully, neither were premoxed.

How were the tannins? I've found that barolo's need at least 10 years to be palatable for me... even more to be enjoyable.

To us, it was very drinkable. The tannin's were on the soft side and not overpowering at all. Based on some articles I have read, the 2008 Barolo's are very drinkable now. This one was very nice, but then I am a huge Italian wine fan.

Blessing and a curse that one of my New Year's resolutions did not involve unallocated wines (I've dropped off a bunch of mailing lists). Still filling out some back vintages when opportunity presents itself......
